What is Penicillium Candidum?
A mold used in cheesemaking to develop the white, velvety rind and enhance the creamy texture and mild flavor of bloomy rind cheeses like Brie and Camembert.
It is closely related to Penicillium camemberti, the more commonly used term for the same species. Both names refer to the same mold, essential for creating the signature appearance and characteristics of these cheeses.
