What is Comté Cheese?

Comté, a distinguished cheese from the Massif du Jura region in eastern France, adheres to a Protected Designation of Origin (PDO) since 1996. Crafted from the raw milk of Montbéliarde or French Simmental cows, Comté is known for its rich, varied flavors—ranging from nutty and creamy to meaty and roasted—and its smooth texture. The cheese matures for anywhere between four months to three years, though it is typically aged for about eight months.

This cheese is deeply rooted in local tradition, with each wheel requiring approximately 423 quarts of milk. Production takes place in cooperative dairies known as fruitières, which source milk from nearby farms to ensure freshness and quality. After initial production, the wheels are transferred to affineurs, experts who mature the cheese on wooden boards within high-humidity cellars, meticulously managing environmental conditions to cultivate each wheel's unique flavor and texture.

The role of the affineur is critical—they carefully monitor the aging process, regularly turning and washing the cheese with a special solution to develop the proper rind. They also assess the cheese's maturity using a sophisticated flavor wheel that details 83 distinct aromas, determining the optimal aging time for each batch. Some affineurs have modernized part of this process with technology, such as laser-guided robots, though much of the work remains artisanal, honoring centuries-old methods.

Comté's complex flavor profile makes it a versatile choice for culinary use, from cooking to serving on a cheese platter, paired excellently with both light and robust wines.
